Abstract
Urban food systems generate substantial edible surplus due to demand uncertainty, time pressure, and coordination challenges in wholesale markets. While circular economy principles encourage keeping edible food in use rather than treating it as waste, many redistribution initiatives struggle to achieve financial sustainability. Environmental and social impact alone do not guarantee long-term operational viability. This thesis examines how a circular food-surplus logistics system can be designed to remain both environmentally impactful and economically sustainable. The research was conducted in collaboration with WECO Impresa Sociale, using their operational infrastructure and real delivery data from the Turin wholesale market (CAAT). The company actively participated in the thesis as a practitioner partner, providing cost data, operational insights, and access to surplus distribution records.
The study follows a two-stage approach
