Abstract:

The thesis explores the gluten-free market in Italy, that has been continuously growing in the last years. The chosen approach will be thorough, as it will comprehend many perspectives of this market in addition to the economic aspect. Indeed, the legislative and health-related frameworks concerning the celiac disease will be some of the concerned topics. This is important because the National Health Service provides every celiac patient a monthly voucher that can be spent to buy gluten-free products, as these products are more expensive than the gluten-containing counterparts. The economic analysis will be composed of an econometric study, utilising regression models, and it will focus on the role of the price on the overall demand of gluten-free foods in Italy, as well as on other variables that impact it too, such as the presence of the aforementioned voucher.
