Abstract
Water, being both a fundamental and limited global resource, requires a specific estimation of its demand because of its direct dependance on population growth and dietary shift. The direct relationship between water availability and climate change highlights that less water is present in vast geographical areas, including Western Europe. Therefore, a quantification of its flows in all the flows in all fields is imperative. In Italy, Cuneo, province in the region of Piemonte, has a significant impact in both rural and industrial life, striving to include sustainability as one of the fundamental principles within the agri-food industry. Thus, the aim of the present thesis is to quantify the water that is used to supply the agri-food product chain in Cuneo.
