Abstract
This thesis aims to analyze the pasta industry in Italy. First, it examines the historical and cultural background of pasta. Then, it explains the durum wheat supply chain and all the production phases needed to transform wheat into the final product. Furthermore, it focused on the market structure of pasta. Lastly, an economic analysis on a sample of Italian fresh and dry pasta firms was carried out.
