Fast and reliable analytical methods are necessary to specify the quality of the food at low cost. The non-destructive hyperspectral imaging technique is a good solution for this topic and has been an active research topic in the recent years. The aim of this thesis is to: •??Study the State-of-the-art of the food quality monitoring using hyperspectral imaging •??collect data using a spectroradiometer to compose a dataset of different quality of food (especially meat) •??Prepare a complete classification methodology to discriminate good from bad quality food.
